Pasta Salad in Garlic Lemon Sauce

Pasta Salad in Garlic and Lemon Sauce is a recipe that is always a home run any place I serve it.  It’s a great one to make ahead and take it to a get together, pot luck or like I do, to a tennis match at the local club.

This one is prepared with fall colors because, everything needs to match to the season!  If I am making this salad during Christmas time, I will use cherry tomatoes and the bell peppers are going to be red and green!  Again, everything needs to match…

It is very important to use a good quality semolina pasta, it really makes the difference in a pasta salad.  Be sure you select a good quality.  I am buying now the Garofalo Organic Semolina Pasta from Amazon, as I can’t find it in the grocery stores where I live.  This time I used the Casarecce one. Cook it in water with salt and olive oil and for the time according to the instructions until al dente; immediately drain removing all the water.  If is not done, add a couple of minutes more.  Do not overcook.

While you are waiting for the pasta to cook, get a skillet and turn on the heat at medium to medium high.  Remeber all stoves are different, should not be cooking too fast.  Immediately add the olive oil, onions, garlic, sun-dried tomatoes with herbs with some of the oil that they come with, capers or olives and sprinkle with freshly ground pepper and a pinch of salt.  Mix and let it cook until the onions are transparent.  Take out of the heat and wait for the pasta to be ready.

While you wait…

Once the pasta is cooked, drain and transfer to a mixing bowl, add the onion mixture to it and mix a little bit.  Let it cool just while you prep all the other ingredients. Extract the lemon juice, cut in halves the tomatoes and quarter lengthwise the kalamata olives;  dice the bell peppers and cut the cilantro leaves in small pieces. In a separate small container, mix the salt, pepper and Badia Complete Seasoning.

It is time to add the tomatoes, bell peppers, cilantro and olives to the pasta.  Sprinkle the salt mixture and mix in 3 steps so everything gets some of the seasoning.

Let it rest and cool in the refrigerator until half hour before you are going to serve it.

If you are going to add any protein to it, add right before you are to serve it along with the cranberries.  If not, just add the cranberries.

It is possible that you need to add some more salt and pepper if you are not adding a salty protein or cheese to the salad.

Pasta Salad in Garlic Lemon Sauce

Ingredients

  • 1 Packet Garofalo Organic Semolina Pasta
  • 1/2 tsp salt and 1 tsp olive oil to cook the pasta
  • 3 tbs Extra Virgin Olive Oil
  • 3 Tbs sun-dried tomatoes with herbs
  • 3-4 Garlic cloves in very small pieces
  • 1 Onion diced
  • Fresh ground pepper and a pinch of salt
  • 3 tbs capers or green olives in small pieces
  • Juice of 3-4 lemons
  • 1/2 tsp salt
  • 3/4 tsp Badia Complete Seasoning
  • 1/4 tsp ground pepper
  • 1/2 cup Kalamata Olives (quartered lengthwise)
  • 3/4 cup Monarch Pearls Tomatoes ( Orange grape tomatoes, halved)
  • 1 Yellow Bell Pepper, diced
  • 1 Orange Bell Pepper, diced
  • 1/2 cup cilantro leaves, in small pieces
  • 1/2 cup dried cranberries
  • Protein of your choice

Instructions

  • Cook the pasta according to the packet instructions until "al dente", do not over cook it. Once cooked and drained transfer it to a mixing bowl.
  • While you are waiting for the pasta to cook, In a skillet add the olive oil, sun-dried tomatoes, garlic cloves, onion and capers or olives on medium temperature.
  • Ground some pepper and a pinch of salt over it and mix.
  • Cook until the onion start to look transparent.
  • Pour over the cooked pasta and mix just a little bit. Let it rest while you prep the rest of the ingredients.
  • Extract the lemon juice, halve the tomatoes and quarter lengthwise the kalamata olives;  dice the bell peppers and cut the cilantro leaves in small pieces.
  • Is time to add the lemon juice, Kalamata Olives, tomatoes, peppers and cilantro.
  • Mix the salt, pepper and Complete seasoning and sprinkle in portions while mixing the salad until completed. Let it rest in the refrigerator until is time to serve or add the protein and cranberries.
  • The salad could need a little more salt and pepper if you are not going to add any salty protein to it. Wait only about 1/2 hour before you serve it to check on salt. Flavors are enhanced during the time is resting.
  • The Cranberries and the protein of your choice should be added just before serving.
