Pasta Salad in Garlic and Lemon Sauce is a recipe that is always a home run any place I serve it. It’s a great one to make ahead and take it to a get together, pot luck or like I do, to a tennis match at the local club.
This one is prepared with fall colors because, everything needs to match to the season! If I am making this salad during Christmas time, I will use cherry tomatoes and the bell peppers are going to be red and green! Again, everything needs to match…
It is very important to use a good quality semolina pasta, it really makes the difference in a pasta salad. Be sure you select a good quality. I am buying now the Garofalo Organic Semolina Pasta from Amazon, as I can’t find it in the grocery stores where I live. This time I used the Casarecce one. Cook it in water with salt and olive oil and for the time according to the instructions until al dente; immediately drain removing all the water. If is not done, add a couple of minutes more. Do not overcook.
Pasta Salad with Garlic and Lemon Sauce
While you are waiting for the pasta to cook, get a skillet and turn on the heat at medium to medium high. Remeber all stoves are different, should not be cooking too fast. Immediately add the olive oil, onions, garlic, sun-dried tomatoes with herbs with some of the oil that they come with, capers or olives and sprinkle with freshly ground pepper and a pinch of salt. Mix and let it cook until the onions are transparent. Take out of the heat and wait for the pasta to be ready.

Once the pasta is cooked, drain and transfer to a mixing bowl, add the onion mixture to it and mix a little bit. Let it cool just while you prep all the other ingredients. Extract the lemon juice, cut in halves the tomatoes and quarter lengthwise the kalamata olives; dice the bell peppers and cut the cilantro leaves in small pieces. In a separate small container, mix the salt, pepper and Badia Complete Seasoning.
It is time to add the tomatoes, bell peppers, cilantro and olives to the pasta. Sprinkle the salt mixture and mix in 3 steps so everything gets some of the seasoning.
Let it rest and cool in the refrigerator until half hour before you are going to serve it.
If you are going to add any protein to it, add right before you are to serve it along with the cranberries. If not, just add the cranberries.
It is possible that you need to add some more salt and pepper if you are not adding a salty protein or cheese to the salad.
